Sometimes it feels like it requires so much from us, something as simple as keeping on top of our own health can seem like the toughest task in the world.


However, I would argue that the idea that structure with your nutrition is difficult is actually WRONG! It’s not your fault. You’ve just never learned how to do it right.


Take this recipe for example, an easy Mexican Power Bowl using left over chicken. You can take the same amount of time you normally do to cook dinner… make double or triple or quadruple the normal amount… and have something like this prepared and pre-portioned out for the next couple / few days:


Mexican Power Bowl Prep Time: 30 min (recipe from the 6 week program recipe book!)


Ingredients: (serves 1)

4 oz cooked chicken breast

1/2 cup quinoa,

cooked 2 cups mix of red / yellow peppers, red onion + cilantro

1/4 sliced avocado

1/4 tsp chili powder

1 tsp of lime juice


Directions:

Sauté peppers & onions to soften.

Add cooked chicken, quinoa and chili powder.

Stir until heated

Top with chopped cilantro, avocado and lime juice & ENJOY


Calories: 458

Fat: 10.4g

Carbs: 53.4g

Protein: 35.9g
